| Rabbit
Wrapped in Smoked Bacon
Ingredients:
Rabbit
Smoked bacon
Paté
Carrots
Swede
Shallots
Butter
Method
When you buy the rabbit,
ask the butcher to take the legs and loin off for you. For
this recipe we will use the loins. You can confit the legs
and make a rabbit hash to go with it. Great dish for a dinner
party.
To wrap the rabbit loins,
place cling film on your work surface.
Place four rashers of streaky bacon
on the film and then put another sheet of film on top and
use a rolling pin to flatten. Place the rabbit loins on
the smoked bacon side by side between the loins. You can,
if you wish, place some paté in the middle.
Fold the bacon over the loins, trimming any excess bacon.
Use the cling film to roll tightly and let it rest in the
fridge. This will help the rabbit and bacon stick together
when frying.
To cook, fry the rabbit in a hot pan. Cook all sides of
the rabbit to make the bacon crispy and cook the rabbit
evenly.
Once cooked, rest and slice.
Serve with roasted root vegetables and a mustard or bacon
sauce.
